Default Carnival Paradise to Catalina and Ensenada Advice

First cruise, my wife and I, 20th anniversary.
Would like to avoid the tourist traps, we enjoy history, scenery, out of
the way quiet restaurants, non drinker/smoker.
Friends advised to take the golf cart tour of Catalina, wouldn't mind maybe
sea kayaking. We're fun socially and enjoy meeting people with similar
interests.
Don't want to just shop at Ensenada which is what I heard was pretty much
all there is.
I'm all ears, please save your rants if you don't like Carnival. Cruise
ship advice is welcome as well.
Gracias
PS Leaving next monday Dec 11th

Take the excursion to the blow hole or to the film studio in Rosartio
Beach or stay on the boat and enjoy the sun shine. This was our first
cruise. I still remember this as one of my favorites. Perhaps because
this was the one that got us hooked on cruising. Be sure to catch the
shows at night. And of course...lobster night in the main dining room.
