I went on the Atlantis in Aruba and was not impressed.

It was actually a nice reef, with plenty of fish life. How much of that you can actually see from inside the sub is another matter. Cozumel would probably be a better bet, because the walls would look impressive even at a distance. I suspect you're going to see more snorkelling. And you're definitely going to see more on a 1 day Discover Scuba course.
