This site lists the following as disappearing:

-- bell boys announcing that the dining room is open, and operating
elevators

HAL still has the bell boys (Yum Yum Boys) to announce that the
dining room is open with their Ding Dongs.

HAL not only has a crew member announce dinner with the bells, on our
cruise last year, the excursion staff gave excellent non-shopping port
lecctures.

Default Douglas Ward's list of things that have disappeared fromcruise...

The Maitre D no longer makes caesar salad at your dining table. Not sure
if this practice continues on the upscale lines, as I have only sailed
on the mass market ships.

Not the Maitre D but the waiter does make caesar salad at your table
in the Pinnacle Grill on HAL ships.

How about?

Exercise reward: "T" shirts, hats, bath robes, sweaters, socks,sweat
shirts, etc?

Nightly midnight buffets?

Nightly pillow chocolates on all lines?

Room gifts on all lines?


Real prizes for quizzes and contests?

BUT also:

No TV in Cabins

No balconies except for some suites

No safes in Cabins

No Refrigerators in cabins
