One of my favorite cafe proprietors was only a generation or two from

Well, that's one guy and I'm sure there are more. Doesn't mean there aren't
many of the other. Just in California alone there are what, over a million
illegal immigrants who most certainly try to eat as they did back home. Restos
(often their own) cater to them as well as to anyone who cares to walk in.

Then there are the legal Mexican immigrants who, for sake of argument have
been here for what, a decade or less (as being here longer leaves them open to
being accused of having lost their 'authentic tastes'). Add all that up, and
coupled with demographic spread (they aren't all in Mexican-only burbs and
even when they are, large fringe areas exist) you end-up with quite a number
of authentic restos sprinkled all over the place (not only in California) and
more openening-up every year.
