On the contrary, corned beef and cabbage is a standard Sunday dinner!
Although actually I prefer cabbage as cole slaw or sauerkraut. Doesn't
everybody in Italy have a big crock full of sauerkraut in their
basement, or do they put it up in jars as I do?

Sauerkraut:

Shred winter cabbages
Shred a carrot for every couple cabbages
Sprinkle with kosher salt at a rate of about 1 tbs per lb.
Pack tightly in 2 qt wide mouth Mason jars
Add brine to top of jar
Place jars with slightly loose lids in sink until they stop working,
then tighten lids

Brine: 1-2 tbs kosher salt per quart of water, add 1/4 tsp vinegar per
qt. if water is very hard.

Basically you want about 5-10% salt, but it is not that critical.
Better to err on the too little side.

But I would expect Italian cole slaw to use olive instead of corn oil.
I assume they added some vinegar to the oil like in standard cole slaw?
