If your stopover has to be Dubai you should probably fly Emirates.
However, the only Chinese destination they service is Hong Kong.

That's not true - they currently fly daily to Shanghai and are adding

Beijing next year.

Thanks Hilary!

I looked at Emirates about six weeks ago when planning my recent trip
to China -- at that time their website only showed service to Hong
Kong. I'm glad that they are expanding.

To answer an earlier poster: a trip from London to the Far East on Gulf
Air is likely to involve passing through more than one airport in the
Gulf region, and thus offer a number of stopover possibilities. I'm
not sure that they have such a thing as a main hub, but I would regard
Muscat as the most interesting place to visit in that part of the
world.

And yes, Moscow is not exactly half way (or anything like!) but there
aren't exactly a lot of international airports between there and
Beijing. Getting a stopover any nearer to the half-way point would
involve going a long way south of the direct route and thus increase
total flying time. For a traveller who doesn't mind that, the
possibilities are almost endless -- India, Pakistan, Ethiopia, Iran ...
