There are select "airways" (which are equivalent to highways or motorways)
between various points. www.flightaware.com has a system where you can view
a flight's progress against a map, but you are likely to find it may vary
from day to day. For example, on a recent flight from DFW to LHR, I tracked
both AA and BA from Dallas over Detroit, Toronto, Montreal and Halifz where
they joined the transatlantic airway, and the next day they operated over
New York and out. Not quite so dramatic on a 2 hour hop from LGW to Malaga,
but it may vary just the same.
